As the leaves change colors and the temperature starts to cool down, I can’t help but overuse my oven. If I could bake everyday this Fall, I would.
Since most of us are not lucky enough (or should I emphasize committed enough) to spend most of our waking hours in the kitchen, I’m sharing this time tested basic cake recipe. This Applesauce Spice Cake is one of my favorites. There’s just something so comforting with the smell of apples, cinnamon, nutmeg and clove.
Yes, it is still gluten free and food allergy friendly. However, even those with no food restrictions will surely enjoy this moist and fluffy cake.
For breakfast, the kids love it with a little butter on top. For snack, I dust it with a little powdered sugar. To make it a fancier dessert, top it with apple pie filling or frost it with this cinnamon icing.
Bring it to your next potluck or Thanksgiving meal. Not only is it safe for those with food allergies or intolerance, it is also a delicious treat.

2 Tbs. golden flax meal
6 Tbs. lukewarm water
2 cups gluten free flour blend (I used Mina’s Purely Divine All Purpose Baking Mix )
1 Tbs. aluminum free baking powder
1/2 tsp. baking soda
1/2 tsp. Real Salt (I used Redmond Real Salt )
1 1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 cup avocado oil + more for greasing the pan
1 cup organic raw sugar
1 1/2 cups unsweetened applesauce
1. Preheat oven to 350F. Using a pastry brush, grease a 10 in round casserole dish or a 13×9 inch glass baking pan.
2. Make a flax goo by combining the flax meal and water. Set aside for at least 5 minutes before using.
3. In a big bowl, whisk the gluten free flour blend, baking powder, baking soda, salt, cinnamon, nutmeg and salt.
4. With the help of mixer, cream the oil, sugar and flax goo until light and airy.
5. While the mixer is running, slowly add the applesauce and flour blend alternately. Start and end with the flour. Mix until just combined. Avoid over mixing.
6. Transfer to the prepared baking dish and bake in the oven for 30-35 minutes. It is done when a toothpick inserted in the middle comes out clean and the cake pulled from the side of the pan.
7. Remove from the oven and place on a cooling rack. Wait for the cake to cool to at least room temperature before cutting.
